Celebrate Galentine’s and Valentine’s Day at La Luna

La luna Chicago is celebrating Galentine’s and Valentine’s Day with brunch and dinner specials. Joining us now with a preview of all the good eats is Chef Marco Colin.

Nayarit Sea food platter (2) 

Ingredients:

4 jumbo shrimp 
4 large scallops 
2 cups of little neck clams 
2 cups green lip mussels 
½ pound of langoustines 
2 tablespoons garlic paste
¼ pounds of butter unsalted 
1 tablespoon of magie seasoning 
¼ cup of lime juice 
Nayarit seasoning mix (spicy) 
Nayarit mix seasoning: 

1 tablespoon ground coriander
1 tablespoon ground cumins
1 tablespoon ground annatto
1 tablespoon garlic powder 
1 tablespoon kosher salt
2 teaspoons oregano
1 tsp ground black pepper
1 tablespoons chicken bouillon powder 
3 tablespoons of ground chile de arbol

Process: 

In a large saute pan at medium heat add butter and garlic, cook for 2 minutes and add your Nayarit spice mix. Add lime and Maggie sauce and set aside. In another sauté pan cook your scallops and rest of the sea food. Once everything has been cook ¾ of the way add your Nayarit sauce and cook for 1 more minute longer. You can pair with a side of baguette if you wish.

.75oz Dimmi

.75oz Heirloom Pineapple amaro

.75oz lemon

Add ingredients to shaker. 

Shake, double strain over large ice cube in a rocks glass 

Calabrian Peach Sour – Calabrian infused vodka and grappa blend, Peach, Lemon, Salt

2oz Calabrian chili infused vodka grappa blend**

.5oz Mathilde Peach

.5oz 2:1 syrup

.75oz lemon

2 d Fee Brothers Peach

2 d Habanero bitter

3 dr 80/20 ***

Combine, shake, double strain “up” into coupe. Garnish with Calabrian chili floated on lemon wheel

Calabrian Infusion:

In a container, combine 75 ounces of vodka and 25 ounces of aged grappa.
Add half a cup of crushed red pepper flakes, gently press or muddle.
Let the infusion sit for at least 3 hours.

80/20 Saline:

  • For every 80 grams of water, add 20 grams of salt.
  • Mix well until the salt is dissolved.
